I've installed a new template and the site is live. When in the theme editor, if you go to 'pages > default page' that's the page I've edited, not realising it's a template for other pages on the site. Is there a way I can resore it back to a default page?

have you tried https://help.shopify.com/en/manual/online-store/themes/theme-structure/extend/edit-theme-code#roll-b... the file in question would be templates/page.json
Otherwise, you can download another copy of your theme and copy-paste contents of this file from there
