Is it possible to define metafields schema with a custom theme ?

I'm exploring the Dawn theme in a purpose to create a custom starter theme with more structured data to products and collections.

So the new Metafield is perfect for this, but actually it seems that the customer or a partner have to log into the admin and define by hand the customfields, is there anyway to create them from a theme schema file ?
