Hi,
The point is that we want to use these original product categories, not for organizing. But because they add to the product variations metafields from a known rank.
We are not comfortable with these metafields and need to create our own metafields, with our own name and value.
And the reason is that with these metafields we don't need to translate the specified values, and the name of the metafield.
If we create product variant metafields, then we have to translate the name of the field and all the specified values for each product.
We have 10 languages, so this is very time consuming with a very large knife of numbers.
They can't even be translated using localize and also then there is a problem when we export the product, it can't export them, it can't back them up.
And these are displayed as additional values to the variant, it can't be the value from which the product is selected.

Product categories in Shopify are based on standard taxonomy and are used for tax rates - https://help.shopify.com/en/manual/products/details/product-category.
You may consider looking at the "Collections," which organize your products into groups and make them easier for users to browse.
