Shopify Generating incorrect User-declared canonical

I have noticed that in Google Console we have thousands of pages that are listed as "Alternate page with proper canonical tag" 

When I inspect the pages, they are all product pages, and the "User-declared canonical" is displaying a completely different product page than the original product page as per the attached picture. From what I have read, Shopify generates the User-declared canonical automatically.  Any info on why this is happening?
