I’ve recently started using the Translate & Adapt app on my Shopify store to support multiple languages.
Since enabling this, my main sitemap URL (https://mydomain.com/sitemap.xml) is automatically redirecting to localized versions such as /en-gb/sitemap.xml or /fr-fr/sitemap.xml. As a result, in Google Search Console, I’m seeing the following issue:
Status: Couldn't fetch sitemap
Can someone help me how to fix this?

From what you shared here, it seems like this Translate & Adapt app has translated your store content into related languages and Google fails to index your original store page content via sitemap correctly. Therefore it will appear the result of Couldn't fetch eventually.
In your second shared screenshot, there exist a blue font content help center and you can click this blue content to know the situation cause code directly at first, then disable your translation app or contact this app related support team for further support. Thank you!
