I have updated my privacy and return policy, but when I go into preview on theme page and click on links for each it still shows the old ones, how do I get this to update, I assumed it would automatically happen. Can anyone help please

You will want to double check that your navigation menu (Settings > Navigation > Footer Menu) is pointing to the correct pages. If you updated your policies under Settings > Policies then you will want to make sure that your footer links are pointing to those specific pages. These are different then pages created under Online Store > Pages.

Hi,
I have absolutely no idea how to make them point to the right page, I went into theme customize and down to footers but have no idea how to do what you suggest. I am completely lost. How do I find the link I need and how do I put it in the correct place.

Did you update the policies you are referring to by going to Settings > Policies? If not, please let me know where you updated your policies so I can make sure to correct my steps here.
If you updated your policy pages under Settings > Policies, then please follow these steps:
In your store admin head to Online Store > Navigation
Click on "Footer Menu" in the list of navigation menus (See screenshot below)
Select "Edit" next to the policy link you wish to edit. The side menu that appears has the name of the link in the top field, and the content it links to in the second field. Click the second field and ensure you have the correct policy page selected. (See screenshot below)
Save your changes and then refresh and test your customer facing website to ensure it is updated.
