Variant Cost and Staff Notification Email

We just migrated to Shopify and can't seem to figure out how to add the cost of our items to our Staff Notification Email. 

In the years that we've been online at another platform, we have enjoyed the ability to double-check our cost and price numbers as our orders are fulfilled. 

Our products are straightforward. One product --> One product number. One cost (cogs). One price.

Is there a variable we can use to display Variant Cost next to the Retail Price (which displays just fine) in our Staff notification email?

Is creating a meta field for this variable an option if this function is not yet part of the native Shopify platform? What is the best practice for inserting a meta field in a notification email?
