This would really depend on the theme and how the image is used. I would expect that the design you have in place now is responsive so whatever image you use will need to be adaptable enough to work at different sizes.

But perhaps with the theme name (or link to your shop) the members here can give some points on a good size to upload. 

Do note some themes do specify a size so it's possible you'll need to use whatever it suggests.
