Why can't I edit the quantities and prices on my products page like I did a few weeks ago?

I'm not sure why I can't edit the prices and quantities of my products right on the main product page any more or why Shopify changed the page format. I sell hand made products so each piece is individually priced and photographed, so I can't do much with bulk editing. I used to be able to just replace the photo of an item after it sold, relink the photo to the new listing, edit the price and quantity accordingly right in the main products page under Variants. Now it's making me click a dropdown menu to edit in a whole new page and save each new quantity and price and it's very inconvenient. 

I used to be able to just edit the price and quantity on the right of where you link the photo under Variants which was much quicker and more efficient. 

Can anyone tell me if there's a way to bring back the old format?

I have the same issue.  I am only seeing this now as of October 2023 and I see your post was quite some time back.
