Do not forget Google Search Console. I see you have verification tag on your site. CS provides great insights into any problems/issues/changes to you organic traffic.
Did you make any big changes to the store on 24 Feb? Is functionality affected in any way? Checkouts, orders, payments - do they still work?

First of all, I want to thank gina3five for mentioning our app.
Second, I can confirm that we have few users whose catalogs are over 10,000 products and in some cases, their collections contain 5,000+ products per collection. So, whether you have large product catalog, large number of collections or combinations of both the app will be able to work with it.
There are few ways to configure and use the app but definitely, you can set it up to push all out of stock products in selected collections to the very bottom of your listing pages. We have a comprehensive guide posted on our blog - Managing Bestsellers with reSort.
