Thanks. I think I will try the tag method actually - I didn't think of that as a work around. Shopify is good but having too many work arounds has made me resort to using a separate POS system for my store and shopify for just online sales only. 
I know exactly what you mean..we do this too. We use bundle services apps and with this, items are deducted from each of their product inventory. Perhaps shopify has a better way.
