I would like to know this as well! I had no idea until just recently that Shopify is keeping the fee on an order canceled right away. For a $5000 bike, this fee is so hefty and I cannot believe they don't refund it!!!
I just found this out about Shopify and I've been on the platform for over 14 years. We were one of their first clients! (don't ask me how I didn't know). We sell high-value items. Someone purchased a $4500 bike on accident, we cancel 5 minutes later...
Would love a solution to this problem as well 
