When you go to your online store, click on the three dots next to the theme then select edit default theme content. Then search for Checkout & system, Email marketing subscribed. You can change it there.

Ok, I figured it out. What you have to do is click on the variations at the top and not the individual variations. Once you click on the variations at the top. It opens up a box where you can drag to change the order.
