3 years later - still no simple toggle to turn this off. Guess I'll create a rule in my email provider to auto-archive them.

Bumping. Also interested in this! It's not uncommon for us to have a customer who moved, or their browser auto-filled the wrong shipping address. Right now the only option is to entirely cancel the order and have them re-order. This is a bad solution...

Are we speaking of different things? I was talking about the metafields, not notes. Notes are useless for me in my use-case as they're customer-facing and we have internal data we're trying to track that shouldn't be shown to the customer.
