Just following up on this old thread because it tends to come up in search results. You can edit orders created through the Storefront API 100%. This launched a while ago but wanted to close the loop.
You currently can not create a storefront access token for the Storefront API with a custom app. Keep an eye out on the changelog for updates! It is on the roadmap.

Can you please list the steps you are taking to create the checkout? Are any errors returned? Can you send over the request ID (found in response headers)

No, this is not true. The app does need to be a sales channel, as described in the authentication process of the docs: https://shopify.dev/docs/storefront-api/getting-started#storefront-api-authentication
