I have found a way to determine my top products!  I have added all of my products into a collection called "Gift Shop".  I can then click to have the list sorted by best selling.  Hopefully, Shopify adds a more detailed report within their analytics ...

Add my name to this as well, please give us the option to change the order of shipping methods.
