We use https://apps.shopify.com/collection-sort-pulsar-lens to sort some collections daily with most recent inventory received.  They also have advanced options for creating a custom sort where you can fine tune sort.

We desperately need this turned off as well!  I always forget to uncheck this and it always ends up biting me in the ass.  Definite PITA.
