More importantly, how is Shopify adjusting for inventory changes when an adjustment is made? Accounting wise, when an inventory adjustment is made, a balancing entry in COGS should also be matching that.
And also, if you were to have someone inadvertently changing inventory numbers (by accident or on purpose) why would there not be a report to show an owner this? This is also a major security flaw of the system especially with valuable inventory.
