Actions to take after one of a kind item sells

My shopify site is limestoneholeyrock.com

The majority of items I am selling are one of a kind. I am selling real rocks. When one is purchased I will replace it with something very similar but not exact. When one is sold it shows sold out.

I know changes can affect seo and such. My question is is there a specific way I need to remove those to not have a negative effect or is it possible I can change the product image and tweak the item specifics to match the new item without having to remove the listing at all. I wanted to ask if you by any chance have come across and information on this type of issue? I myself have not had any luck.
