Can you please consider adding the option to select a Collection in addition to the individual product options you currently have available for the custom shipping profiles?

I will like to add a Collection with no shipping rates to a Custom Shipping Profile for workshops and events that occur frequently. It is a hassle and easy to forget to select each individual product when creating a new product but, if I had the option to select the entire collection, the products will automate in the custom shipping profile instead.

That’s a great suggestion! In the meantime, you could create a tag-based shipping rule to automate the process for the entire collection instead of selecting products individually.
