Even if everything was simple, trying to put every simple thing into every theme is not simple.
Developers make realistic general choices in what features to include.
It’s up to merchants to proactively either ensure a theme has a desired feature or invest in specific needs to differentiate themselves.
In some themes it may be possible to use a custom-liquid block, or liquid setting to add a subtitle for the product-grid/product-cards for collection templates , similar to the product templates info section in dawn based themes.
If the subtitle is the same for every product then CSS may be possibly used to insert the same static duplicate text to each card using a pseudo element.
Beyond that a customization is need to add such features to themes product-grids.

You can create subtitle metafield for your products and then add it under product title in Online Store > Themes > Customize > Products > your product template
