Yes, you can absolutely set this up in Shopify, and you don’t need to apply it to every product. You can selectively replace “Add to Cart” with “Request a Quote” on only the products you choose.
The simplest way is to use a Request a Quote app that lets you enable the button on specific products or collections only.A good option for this is Shopify Request a Quote by Addify.
