Trying to create another “additional content 2” without affecting every other product
If I add a page on additional content 2 it applies to every page because this section is from the “theme settings” I want to be able to add additional content to individual products
What I am trying to do:
If I add " additional content 2 " via theme settings it applies this same product information drop down menu on every product

You can solve this problem using metafield.
Create two product metafields for the two additional dropdown. Now open the customization, where you are right now and connect the dynamic source metafield there. So if you have added text in product metafield the dropdowns will be shown else no. Feel free to ask if needed any help.

Yeah I came across metafield:
How do I now make a drop down information section to go just below “shipping information”
If you can teach me how to do one that would be amazing so I can apply this to every other product and make their own product information

Based on your first screenshot, I think I know where things are going wrong here:
You’re not using a theme that supports sections/blocks (ie. you’re using a very old theme).
If you upgrade to the latest version of your theme (or switch themes, to any other theme from the Shopify theme store - latest version), then you should have the ability to add ‘sections/blocks’ to your custom product template (which will then only show on the product that you’ve assigned the template to, instead of all products).
