Is it possible to handle additional variants by customizing the theme or we need to try different way? I have 200 SKUs in singlt style and we are unable to add more than 100 variants.

This is not possible, it is managed by Shopify, and you cannot customize it.
You can also contact Shopify directly for support.

@indra It is possible to present multiple products as a singular variant through theme customizations, aka product families, aka flat products aka product siblings etc etc.
This is not the same as creating variants in the admin,
Currently no the admin cannot create more than 100 variant, in the future new features that are effectively in beta will change this
