Hi! Is there a way to use AI to find the dominant color of a product and then add that colorname into a metafield on the product? I have currently tagged all products where we have not set a color, but I would like AI to help me finding the color of the products.

Yeah you can do this using the chatgpt vision API. Should be able to hook this into flow for you.
