Since the big Shopify sales tax overhaul, I need to change all my products to “physical” products, even though we don’t ship anything. Is there an easy way to batch edit for all of my 1000s of products? If not, it will take me multiple days to finish this manual entry project.

I understand you’re wanting to make all your products as physical products. You can achieve this through a CSV import.
First, you’ll need to export your current product list by heading to Products > Export in your Shopify Admin. Once you’ve exported your file, you will adjust the ‘Requires Shipping’ column to TRUE. Then head back to Products and use the ‘Import’ option to import the newly adjusted CSV.
