Most payment providers should allow you to have the option to register as a sole trader - though they would still require some documents such as your proof of identity, proof of address, and others depending on the country you’re based in.
I would recommend you take a look at the list of payment gateways available in Cyprus here - and if you choose one that you like, I would also suggest you get in contact with their support directly to better understand what they would require of you in order to use their services.
