For when a new product or variant (flavour or size) is added to the store, how do I get the new arrival and new flavour badges to automatically be removed after 30 days from a product listing on both the collections page and product page?

Kindly consider using the Date feature within the Product Labels app. Based on the settings in the screenshot, the badges will appear on items activated within 30 days. Besides, on the General Settings tab, you can choose which pages your label will be displayed on.

With the app can a user upload custom images for the badges?
Yes, of course you can.
