I’ve never really understood this part of the Shopify process when we create a new product:
Sales channels
Online Store
Google & YouTube
Shop, Facebook & Instagram, Yotpo Email Marketing & SMS, and 1 more
Like, what does it mean? It’s a real basic question but are these the places where my products might appear with the right SEO / metadata? But would they then be led back to my shop to purchase the item? Or can you purchase directly on those places? (I imagine not).
Is the SEO different for each platform? Perhaps you’re only answering for Google, in which case I’m guessing it’s mainly about ads? Or if not, perhaps we can really move things with the proper meta data in the product itself. (Description? Fields below)?

These channels are for pushing your products on these specific platforms.
So for Google Shopping, if you are using the Google and Youtube app you would check the box for Google & Youtube.
From my perspective yes, SEO is very different from your website organic text results in Google, vs Google Shopping.
For example what I do is submit the products to Google Merchant Center (which is the Google & Youtube channel you mentioned), then I change the data entirely to optimize and get better results. In a lot of the cases the titles on the website are rather short, to keep it clean and professional. While on Google shopping we want a more descriptive title, because keywords are extracted from the titles so that consumers who are searching for a product can find you.
While you can use 1 title for everything, it is usually best you dedicate some time for each channel what works best. A good start would be using your Google Search Console data as a basis to build up your titles.
As I specialize just in Google Ads and Google Merchant Center I can not comment on the other channels, but in a short sentence, it will be to publish your products on these specific channels.
