I love the bulk edit product feature in Shopify and use it all the time. But, why can’t I bulk edit alt text for images without an app? Is there a way?

Unfortunately I don’t think it’s possible to bulk edit image alt text, but I’ll pass this feedback along. There might be some apps in the app store that can help you, though.
