I would like to know if certain payment options on my gateway can be disabled, when certain products are added to the shopping cart?

The short answer is: no. A payment gateway processes orders based on currency and location, and cannot be disabled when a particular product is placed in the shopping cart.
However, if you tell me a little more about your store and why you want to restrict payment gateways for certain products, I could try to dig into a possible workaround!
