i didn´t fully set up my Shop For the Payments,
but my question is if Customers enter my website and buy a product with paypal do i still get the money. Or how does this work ?

So long as you have one payment gateway fully setup, you will be able to process orders on your store and receive payouts from the gateway. Since it sounds like you setup PayPal, you will be able to process orders and receive payments through their gateway.

Yes, you will receive the money as long as PayPal is properly connected and active in your Shopify store.
Once a customer completes the checkout using PayPal, the payment is processed through PayPal and the amount is credited to your PayPal account (not directly to Shopify). From there, you can transfer it to your bank account.

• Make sure your PayPal account is fully verified
• Check that your PayPal email in Shopify is correct
• Ensure the payment gateway is set to “active”
