It is possible to edit your packing slip to include your VAT number. However, there are some alternatives that I’d be happy to go over with you for your considerations as well.
If you’d like to edit the packing slip, then you can do so under the Shipping and delivery settings in your admin. From there, you can manually enter your VAT number or you can add the second address variable - {{ shop_address.address2 }} to the template. The latter option allows you to pull the VAT from the second address field from your Store details settings, which may be beneficial for other store management purposes (eg. invoices, accounting, etc.)

That being said, you can also consider using our free app, Order Printer, which can help with invoices and packing slips. Or, you can also use third-party apps, like Sufio: Professional Invoices, which offer added features - such as capturing VAT from your business customers.
If you’re already using our Order Printer app, then you can also add the VAT number manually or add the variable for the second address field - {{ shop.address2 }} to the template(s).
