Is it possible to include the customers tags on our picklists? We use Order Printer. I want to add tags that indicate how many orders a customer has placed over time, or how much the customer has spent with us. Is this possible?

Yes, you can add customer tags to your picklist in Order Printer, but you’ll need to modify the template code.
However, Shopify doesn’t natively track order count or total spend in tags, so you’d need an automation tool (like Shopify Flow or a third-party app) to assign these values as customer tags. Once tagged, they will appear on the picklist using the code above.
