I am currently living in South Africa but only shipping to the uk usa australia and new zealand ( due to shipping prices to south africa is absurd )
Can I change my business address to one of those countries ?

This is a common problem for a lot of international businesses. If you can find a legitimate address service you could avoid a lot of legal issues since your stated address would be legitimate.
For legal reasons I can’t give direct company suggestions so I can only suggest searching on google and thoroughly researching your shortlisted candidates’ histories.

My father in law stays in the uk so giving his address wont be a problem?

You would likely need written permission from him, an ok from shopify and just to cover yourself, just seek a $5 lawyer consultation from both jurisdictions.
It’s a lot cheaper than fines and other legal fallout.
