Can I change the way Dawn theme has sort and filter set up?

I am using the Dawn theme and would like the sort and filter options to be set up the way it was in Debut…using tags instead of product type. I have a collection called ornaments…when you select sort and filter it shows product type and ornaments there isn’t really any way to sort the 100 ornaments in this collection. Hope this makes sense.
