Is there anyway that I can design my blog posts within customization options of Shopify (like adding sections, photos etc?) or does it only editable with a simple edit box that I see it right now?

Yes it is possible to make the layout of blog post similar to shopify sections. But for that you need to use Metafields or you can directly use the HTML of section in the white editable box.

shopify is limited to their blog pages
but you can turn your blogs to a shoify 2.0 to have sections everywhere
