you have a variant option to save the product number.

If you do not want show the product number on the checkout page.

you can consider clearing the product number on the variant detail page in shopify admin.

Please note:

Try removing product number from one variant first. Check if it can works well.

And then make the same updates to all your products.

I need the product number to keep track of inventory. Does that mean if I keep the product number in variants, they have to be shown at checkout page?

Hey, Can you use variant barcode or sku to save the product number, but not use option to save the product number.

All the variant options will show on the checkout page, and it is impossible to make any changes to checkout page.
