I would like to be able to link a category of blog posts to an image, such as all posts that contain a specific tag without creating multiple blogs. Is this possible? I see how to link an entire blog, how to link just one blog post, but not how to have, for example, four images each linked to a different group of blog posts, like a collection.
My designer insisted I couldn’t do this so I have created 4 “separate” blogs to be my categories and then I link each one of these category blogs as Categories linked across the top of my Blog Landing page. If you have a side bar, you could also use the Rich Text block to add an image and a hyperlink to each category blog.

Would tag work for you?
When you add a tag to a blog post, you are essentially assigning the blog post to a “category” under the same tag; and they can be accessed via the url format" abc.com/blogs/[blog-name]/tagged/[tag]"
Example, if I have a blog called “Recipes”, and I want to access all Recipes blog posts tagged with “salmon”, I can access them via:
https://hueapps.myshopify.com/blogs/recipes/tagged/salmon
You can then link your category image to this URL.
