Can I process shipping by order in Shopify and set a default delivery company?

Hello.
I have a question about the processing of shopfiy shipment.

  1. Is it possible to process shipping by order, not by product?
    Can I enter the invoice number by product unit?

  2. Is the delivery company set to FedEx by default?
    I didn’t send it to FedEx, but it’s set to FedEx.
