Is there a way that I can have static pricing across other countries? For E.g. I want to charge $45nz for a print in New Zealand, But charge $45Australian in Australia, and $45US in USA? Is there a way to set this up in my store? Therefor I don’t want it converted to their currency. The reason for this is I get my prints printed in those countries therefor the Cost of goods sold is much more expensive as I am paying in New Zealand dollars.

You can use Shopify Markets to set product prices on a regional basis, and if you’d prefer, you can keep NZD as the default and sole currency on your store. You can use Shopify Payments and Shopify Markets to accept payments in local currencies but you are under no obligation to do so if you’d rather keep everything in NZD.
It is not possible for you to set a unit price, such as $45, and have that figure remain the same across multiple currencies (e.g. $45 NZD, $45 AUD, $45 USD) without enabling multiple currencies on your store. You can keep things in NZD if you wish, but you’d then have to use the aforemented pricing feature to set different prices in the regions you’re selling to—for example, $45 NZD is roughly equivalent to $26 USD, so if you wanted customers in the US to pay around $45 for your product, you’d have to set a price of around $57 NZD for the US market.
I appreciate that it might be more financially viable for you not to accept payments in other currencies, but allowing customers to check out in their own currency (e.g. Americans being able to buy in USD) might help improve sales in international markets.
Currencies aside, I’d also encourage you look into and utlize the other localization features offered by Shopify Markets, such as using international domains and adding language translations using the Translate & Adapt app. Even though you seem to primarily be selling to English-speaking markets, the app allows you to edit content on your site based on where your customers are visiting on. For example, if you were running a promotion targetting the US Thanksgiving holiday, you can add related content to the US market only while Australian and New Zealander customers would not see it.
