I understand that you have an Individual Taxpayer Identification Number and inquiring whether you can use this for Shopify Payments.
In regards to using an ITIN number, you’ll need to communicate with our internal team so they can outline exactly which documents will be required in this situation. You can create a support request directly in the Shopify Help Center, log in to your store, follow the prompts and view our available support contact options.
However, since you are based in the United States, I’d like to share the general requirements /documents that can be submitted during the Shopify Payments onboarding process.
General Requirements for Shopify Payments - United States:

Government-issued photo I.D: Passport, driver’s license, birth certificate, U.S. visa card)

Proof of address: Bank statement, dated within the last 6 months, utility bill, Government issued letter)
