First and foremost, what a great-looking shop you have! I really love the professional layout, branding photography and easy-to-use menu system. I see exactly what you mean about your carousels arrows overlapping with your carousel buttons and would be happy to offer you some ideas moving forward.
My first question would be, have you manipulated your Minimal theme coding in any way? If so, this could have caused issues with the live theme. What I would recommend doing for a test, is previewing an unpublished Shopify theme in your theme library to see if the issue replicates on the unpublished Shopify theme.
You can do this by heading to your admin and Online store>Themes>Theme Library and clicking “Explore free themes” to choose a free Shopify theme to test:
You can then click “Actions” and “Preview” to view the unpublished theme to see if the carousel error replicates:
If the issue does not replicate, this would point to an issue with your primary Minimal themes coding.
If you did make any changes to your theme files and need to revert them, you can roll back .liquid files individually to a time and date before you made said changes. We have a handy guide here that walks through how you can try this.
