Is there a way to make the category images smaller on the homepage of dawn theme - I want to increase some how to 6 across, not 5 but cannot make this happen - can anyone help???

As your requiment " increase some how to 6 across, not 5", you can try this follow my guide:
Step 1: Go to Online Store => Themes => Edit code
Step 2: Search feature-collection.liquid and edit: change attribute “max” from 5 to 6. Click Save.
Step 3: Go to Online Store => Themes => Customize :
In Homepage, Feature Collections, change “Number of columns on desktop” from 5 to 6.
You can choose “Maximum products to show” to show quantities of products if you want.
And the result: Storefront display 6 category images follow your requirement:
