I have created a product with a Category of Desk Organizers and a Type of Corporate Gifts. But when I go back to the Product Listing, Desk Organizers shows up in the Type Column instead of Corporate Gifts.
My thought is that Product Type should show up as (1) that is what the heading says, (2) product type is more useful for filtering than product category as it more specific to your particular store; product categories are too generic in nature to be helpful and (3) the name that you choose, Corporate Gifts, for example, is not available in the category field.
I have 2 screenshots here - one shows the Product Detail where the Product Category is Animal & Pet Supplies and the Product Type is “test type”.
In the Product Listing screenshot under Type it shows Animal & Pet Supplies which is the Category not the Type. In my opinion it should show “test type”. I think that the Type is more relevant here as they are what you set and specific to your store rather than the generic categories which Shopify generates and are really for use with the taxes.
I have tried this is 2 stores with different themes and it shows the same in both.

It looks like this is how shopify shows it on their backend, if you remove product category all together then product type will be shown there, like in your case you can remove ‘Animal & Pet Supplies’ from product category from your product
On frontend, on collection pages filters, It always shows value defined in “Product type”
I think, “Product category” is just a way to represent it on their backend, if you remove it then product type will take its place
Please check if it works.
