I’ve been trying to center the collection name but there is no drop down for alignment on the Origin Theme… any advice?

Would you mind sharing your store URL? The demo theme doesn’t display the collections, so it’s hard to determine what code is being used.
you can center the collection title in your customize settings and it can be done depending on the themes that you use
