Change buy-button to mail sign-up

Hi all,

I am about to do a pre-launch of the shopify store, and want to do product interest validation.

Instead of customers actually adding the product to the cart, I want to change the buy-now button, that a mail sign-up appears when they click the buy-now button and they are informed once we article is available.

With that I hope to capture some mails and see what products are popular and which ones not.

How would that would for a single product setup? Just watched the video from Klaviyo, but its not very specific on the use-case I have.
