Good morning everyone, how can I do so that the products that are in stock or do not show a (-) if not that it says product not available but only for certain products not for all.

It sounds like you want your out-of-stock products to say “not available” - is this correct?
If so, and if you’re using a Shopify-supported theme, then this is something that our Theme Support team can help you with. If your store is subscribed to a plan, then you’re eligible to use the complimentary design time included with your subscription on customizing your theme. While we’re not able to provide account-specific support via the Shopify Community at this time, we’d be happy to continue assisting you through live chat, email, or callback. Please visit the Shopify Help Center and log in to your account to create a support request.
Alternatively, you can also hide out-of-stock products by using automatic collections. However, it’s important to note that this does apply to the default catalog containing all products. In order to hide products from the default catalog, you’ll also need to create a new catalog using automatic collections.

Since you only want this to apply to certain products, then customizing the theme may be the ideal option. This way, you can create a separate product page template and apply them to specific products. For this option, you’ll need to contact our Support team and they can help send a customization request to our Theme Support on your behalf.

You can contact our Support team via the Shopify Help Center. From there, simply log into your account and you’ll be prompted to make a search. It’s important to note that you need to enter a search, which can be anything, so that you’re not looped back to the login page. Once you’ve made a search, a button to “Get support” will appear beneath the relevant resources generated by the search. After clicking this button, you’ll be presented with contact options - such as callback, email, or live chat.
