Is it possible to customize the word ‘/products/’ in the URL to something more relevant to our business? Similarly, can the word ‘/collections/’ in the URL be changed to better align with our business?
There is no option under edit SEO for changing the default words products and collections in the URL slug.

Unfortunately it is not possible to customize /products/ or /collections/ in the URLs.
They are default settings for Shopify.

We cannot, unfortunately. However, most of the time it is not so important, sticking to English version of subpath can be beneficial for search engines to understand the structure of the store.
For a portfolio structure using the products CMS, would it be possible to swap the word products to projects for example?
We can change default /products or /collections in the URLs
