In de checkout kan ik bij ‘Country/Region’ alleen ‘Netherlands’ kiezen.

Hoe krijg ik hier ook andere landen te zien?

You have to create more than 1 Shipping Profile in your Shopify Settings. Enable Europe for Example and you are good to go.
